"Grapes from eight different areas are used to produce Chablis wines: the left bank of the Serein river, from Pargues to the valleys of Forêts and Vaillons are blended with the parcel just below the Montée de Tonnerre to create this authentic Chablis.
White-fleshed fruit notes including peach, with a persistent mineral backbone. On the palate, typically Chablis stony aromas characterise this pure, beautifully balanced wine.
No added yeasts, long fermentation using indigenous yeasts in temperature-controlled tanks. Spontaneous malolactic fermentation. Matured for 6 to 10 months only in stainless steel tanks with as little intervention as possible. Moderate cold stabilisation."
