Mr Mick Rose 2025
Mr. Mick Wines is named after the late K.H. (Mr. Mick) Knappstein, an Australian winemaking legend and Tim Adams’ mentor and friend. Tim and his wife Pam are proud custodians of the landmark property at 7 Dominic Street, Clare, that now bears his name and houses a renowned restaurant, cellar door and gallery. Tim and the winemaking team continues Mr. Mick’s philosophy of making "affordable wines for everyone to enjoy".
Sangiovese, Tempranillo and Grenache was crushed, chilled and held cold soaking separately in the press in order to extract vibrant red berry flavours from the skins. The juices were cold settled and fermented separately prior to careful blending, stabilisation, clarification and bottling. Very slight residual sweetness remains in order to enhance the natural fruit characters.
