100% handpicked in March 2019. Combination of whole bunch and destemming and pressed, with overnight juice settling. Wild yeast fermentation. Matured in a mixture of seasoned french oak barriques (20% new) and part-malolactic fermentation. Matured on full ferment lees for 9 months. Bottled in December 2019. Unfined and unfiltered.
